Collecting fresh mushrooms yourself requires some experience and a good knowledge of mushrooms. For our mushroom recipes you can easily use the small, good quality forest creatures from the supermarket or market.

Mushrooms fit perfectly into a healthy eating style

Mushrooms are very healthy. They contain hardly any fat and consist mostly of water. Fresh mushrooms score points with few calories and lots of minerals. They provide potassium, phosphorus, fiber, vitamins B and D. They also have a high protein content. Mushrooms are therefore extremely popular, especially among vegetarians and vegans.

Fresh mushrooms are a popular ingredient in German cuisine: porcini mushrooms, button mushrooms, truffles, oyster mushrooms, king oyster mushrooms, shiitake mushrooms or chanterelles. Mushroom recipes: Refined mushroom bruschetta

You need:

  • 130 grams of leaf spinach, fresh
  • 150 grams of mushrooms
  • ​150 Gramm Baguette
  • Butter
  • 2 cloves of garlic
  • Salt
  • 80 grams of goat cheese

That's how it works:

Heat butter in a pan until hot. Press a clove of garlic(Order the press directly from Amazon here*). Add the spinach leaves, garlic cloves and a little salt. Fry everything until the spinach is soft. Clean the mushrooms and cut them in slices. Heat butter in a pan and season with a little salt.

Cut the baguette into slices. Peel the garlic clove and rub it on the baguette slices. Place some spinach on the slices and top with mushrooms. Garnish with some crumbled goat cheese before serving.

Our tip:You can also use brioche instead of baguette. Simply cut it into slices and fry it briefly in the pan with a little olive oil.

Mushroom Recipes: Aromatic Garlic Mushrooms

You need:

  • 300 grams of button or portobello mushrooms
  • ​2 cloves of garlic
  • Salt
  • Pfeffer
  • 5 tbsp olive oil
  • ​3 tbsp breadcrumbs
  • 3 tbsp parmesan, grated
  • 2 tsp lemon juice
  • 1/2 bunch flat-leaf parsley, chopped

That's how it works:

Clean the mushrooms, break out the stems and chop them finely. Chop the parsley finely. Preheat oven to 220 degrees fan oven. Peel and press garlic. Add the mushroom stalks, breadcrumbs, Parmesan, 2 tablespoons olive oil and lemon juice and mix well.

Season with salt and pepper. Brush the baking tray with the remaining oil, place the mushrooms on it and fill each mushroom with some of the cheese mixture. Bake the mushrooms in the preheated oven for about eight minutes and serve sprinkled with parsley.

Mushroom Recipes: Creamy Mushroom Spaghetti

You need:

  • ​200 grams of spaghetti or linguine
  • 4 TL Butter
  • 3 garlic cloves, pressed
  • 400 grams mushrooms, sliced
  • 2 tsp flour
  • 1 teaspoon herbs of Provence
  • 200 ml milk
  • Salt
  • Pfeffer
  • 3 tsp olive oil
  • 60 ml milk or cream
  • 1/2 bunch flat-leaf parsley, chopped

That's how it works:

Prepare pasta according to package instructions. Drain and drizzle with a little olive oil to prevent the pasta from sticking to each other. Melt two teaspoons of butter in a pan. Add a clove of garlic and fry briefly. Add mushrooms and sauté until soft and brown, 5-10 minutes.

Sprinkle flour and herbs in a small pot. Slowly stir in milk or cream. Cook the sauce until it is slightly thick. Season with salt and pepper. Mix the pasta, sauce and mushrooms well. If the sauce is too thick, add a little water or olive oil. Serve the pasta hot with chopped parsley.

Mushroom recipes: Juicy gnocchi with mushrooms

You need:

  • ​1 pack of gnocchi
  • 200 grams of shiitake mushrooms, roughly chopped
  • 200 grams white mushrooms, roughly chopped
  • 2 TL Butter
  • 2 cloves of garlic, minced
  • 1 teaspoon rosemary, finely chopped
  • 160 ml white wine
  • 70 grams feta, crumbled
  • 1/2 bunch flat-leaf parsley, chopped

That's how it works:

Cook gnocchi according to package instructions. Melt butter in a large skillet. Add mushrooms and sauté for five minutes until browned and soft. Add garlic and rosemary. Pour white wine into the pan and simmer for another five minutes.

Add the gnocchi to the sauce and fry for seven minutes. Remove the pan from the heat and sprinkle feta over the gnocchi. Arrange the pasta on deep plates and serve with chopped parsley.

Mushroom Recipes: Spicy Balsamic Pasta

You need:

  • 120 Gramm Fettuccine
  • 2 TL Butter
  • 1 tsp olive oil
  • 1 small shallot, finely diced
  • 2 cloves of garlic, pressed
  • 200 grams portobello mushrooms, sliced
  • 60 ml Balsamic
  • 60 ml whipped cream
  • 1 teaspoon flat-leaf parsley, chopped
  • 40 grams of parmesan, grated
  • Salt
  • ​Pfeffer

That's how it works:

Cook fettuccine according to package instructions.Heat a teaspoon of butter and a teaspoon of olive oil in a large pan. Add shallot and garlic. Stir in mushrooms and sauté for eight minutes until browned and soft. Pour balsamic vinegar, cream, parmesan and a teaspoon of butter into the pan. Bring everything to the boil again briefly and remove the pan from the heat.

Add the fettucine to the sauce and stir well. Sprinkle in the parsley and season with salt and pepper. Garnish with some fresh parmesan and black pepper before serving.
