Anyone who follows me has probably read that one of my goals for this year is to eat less meat. I was not a big meat eater, but I think that you can make so many tasty recipes with vegetables, legumes and meat substitutes that eating no or less meat is really tasty, surprising and good.

I now have a 'rule' that I eat meat once a week. And that's great. I am also experimenting more with vegan recipes, so 100% plant-based. That's why I recently started a section withvegan receptenon my site. I don't think I will become completely vegan myself (I just think cheese is too tasty), but I find it fun and educational to look at new options.

I usually use a meat substitute once or twice a week, often vegetarian minced meat or a veggie burger. And falafel balls are also regularly on the menu, which Eric loves. This vegan tandoori was also a great success, Eric even said that he thinks the Vivera plant-based chicken pieces are even tastier than real chicken and also more tender. Moreover, the recipe can be on the table in half an hour. I will definitely make this more often!

Quick vegetable tandoori chicken recipe

MAIN COURSE – 30 MINUTES – 2 PEOPLE

Ingredients
175 grVivera Plant Pieces as Chicken
1 ui
1 teen knoflook
Piece of ginger of 3 cm
150 grams yellow rice
1 paprika
2 tomatoes
250 ml of coconut milk
2 tablespoons tomato paste
Handful of cashew nuts
½ cucumber
2 tablespoons of vinegar
Pita breads to serve

Herbal mixture:
1 tablespoon garam masala
1 pinch of cinnamon
1 teaspoon turmeric
1 teaspoon paprika powder
Sprinkle salt and pepper
1 tablespoon oil

Preparation
Mix the herb mixture with the vegetable chicken pieces. Boil the rice until done.

Finely chop the onion, garlic and ginger. Fry in a pan with a tablespoon of oil. Add the spicy Plant Pieces like Chicken and fry for a minute. Then add the diced pepper and tomato and fry for 3 minutes.

Then add the tomato puree and coconut milk and stir well. Let the mixture simmer for 10 to 15 minutes and thicken slightly. Do you want it thickened faster? Then add a teaspoon of cornstarch mixed with 1 tablespoon of water to the vegetable tandoori chicken.

In the meantime, cut the cucumber into thin slices or ribbons and mix with the vinegar and a pinch of salt and pepper. Drain the rice. Finally, add the cashew nuts to the vegetable tandoori chicken.

Serve the yellow rice with the vegetable tandoori chicken and the cucumber in a bowl or on a plate. Serve with some pieces of pita bread.
