Lemon pie. This delicious fresh lemon cake is a joy to put on the table! It is completely vegan and yet creamy in taste. This cake is perfectly balanced with a delicious crumbly nut base and a creamy, fresh and sweet and sour filling of lemon and coconut. Highly recommended!

A lemon cake can of course be made all year round, but this is a really fan-tas-tic bake to make in the summer. Nice and fresh, creamy and light. You can decorate it with fresh (summer) fruit, sprigs of mint and possibly some lemon slices. After all, the eye also wants something 😉 .

Fresh lemon cake

The combination of coconut milk and lemon juice in the filling of this cake creates an incredibly tasty, summery cake. Neither the coconut milk nor the lemon juice is overpowering. The sugar makes the sour taste of the lemon juice milder and the coconut milk gives a subtle, but above all creamy taste to the cake, so delicious!

What do you need for a lemon tart?

Don't be put off by the ingredient list. It may seem a bit long because of the different nuts, but you probably have most of the ingredients at home. You can also replace the various nuts with other (unsalted) nuts that you have at home, or that you simply like better. As long as you keep the ratio the same, nothing can go wrong!

Tasty and ready quickly

The funny thing about this recipe is that it is quite an impressive cake in terms of appearance. The robust base and creamy, smooth filling make it seem like you spent a lot of time on this cake. The reality? None of that! You make the base in a food processor and then all you have to do is press it down, bake it in the oven and let it cool completely.

The same applies to the filling, pour everything into a pan and pour it over the bottom. Let this cool again and (preferably) let it set overnight in the refrigerator. A child can do the laundry!

Vegan lemon cake

For a long time I thought that making vegan cakes was a difficult or time-consuming task, but nothing could be further from the truth. With the right ingredients such as unsalted nuts, sweet dates, fresh lemons and creamy coconut milk, you can put a delicious vegan lemon cake on the table in no time.

The only thing you need is a little patience so that the cake can set in the refrigerator. That's all you really need to do!

What you need (ingredients):

For the bottom:

  • 100 gram cashew nuts
  • 100 gram oatmeal
  • 100 gram dates (medjool - without seed)
  • 50 gram almonds (unsalted)
  • 50 gram vegetable butter (unsalted)
  • 50 gram grated coconut
  • 1 tablespoon maple syrup
  • salty

For the filling:

  • 400 ml coconut milk
  • zest of 1 lemon
  • 125 ml lemon juice
  • 75 gram sugar
  • 3 tablespoons cornstarch
  • turmeric or another (natural) yellow dye
  • 15 gram jelly

Fresh fruit, mint leaves and/or lemon slices for garnish

    HOW TO MAKE IT (preparation method):

    • Grease a springform pan or quiche pan with a diameter of 24 centimeters.

    • Preheat the oven to 180 degrees top and bottom heat.

    • Place all ingredients for the base in a food processor and grind until fine.

    • In the meantime, add a few tablespoons of cold water until the bottom 'packs' and becomes sticky.

    • Wet your hands and divide the base over the springform or quiche tin. Press well and make sure you have a raised edge all around, about half a centimeter thick.

    • Now bake the base in the oven for 15 minutes and then let it cool completely.

    • Then make the filling by heating the coconut milk, lemon zest, lemon juice, sugar and cornstarch until it just barely boils.

    • If desired, add some turmeric or another type of (natural) yellow dye.

    • Then remove the pan from the heat and mix the agar agar through it thoroughly.

    • Now pour the filling onto the cooled base and place it in the refrigerator to set for at least 4 hours or (preferably) overnight.

    • Just before serving, decorate with fresh (summer) fruit, lemon slices and/or fresh herbs such as mint.
